Cheddar & Chive Scones
Makes 5 to 6 Scones
250g x Self-Raising Flour
65g x Diced Butter
1/2 tsp x Baking powder
1/4 tsp x Salt
75g x Cheddar Cheese (Grated)
100ml x Milk
1 x Egg + 1 for Glazing
1 Tbsp x Chopped Chives (plus extra for decoration)
1. Place the self-raising flour, baking powder, salt and diced butter into a mixing bowl and rub together between your fingers and thumbs until it resembles breadcrumbs.
2. Add in the grated cheddar cheese and chopped chives. Mix together and make a well in the centre.
3. Crack 1 egg into the centre and pour in 100ml of milk. Mix everything together until it comes together to form a dough.
4. Place the dough onto a lightly floured work surface and roll out to roughly 1.5 inch in thickness. Using a 7cm cookie cutter, cut straight down without twisting.
5. Place the scones onto a baking tray lined with parchment paper and brush the top with beaten egg. Sprinkle with a few extra chives and bake in a preheated oven at 170°C for 20 to 25 minutes until well risen and golden.
6. Place onto a cooling rack to cool.
