****Ingredients:
4 lbs of Cow foot
2 1/2 tablespoons curry powder ( only season the meat with 2 tablespoons
Salt to taste is optional
1/4 teaspoon of Black pepper
2 tablespoons of Maggie All-purpose seasoning
1 tablespoon onion powder
1 tablespoon seasoning salt
2 tablespoons garlic powder
1 tablespoon of Allspice (Pimento) crushed
2 tablespoons vegetable oil
1 Onion sliced
3 Stalks scallions chopped
4 sprigs of thyme
5 Cloves of garlic chopped
Scotch bonnet pepper (seeded) I only used a quarter of the pepper because it's very hot.
1/4 cups of red bell pepper (optional)
2 Cans of Grace Butter beans (drained)
6- 10 cups of water depends on how tough the meat is.
Instructions:
1. Wash the cow foot with vinegar, lemons, or limes.
2. Clean cow foot thoroughly, scrape off any burnt black bits; if there is any. (pat meat dry with paper towels.
3. Season with 2 tablespoons of curry powder, black pepper, maggie all-purpose, onion powder, garlic powder, seasoning salt, and allspice
4. Marinate overnight if possible
5. In a pot warm the vegetable oil, make sure you warm the oil on low heat, add the 1/2 tablespoon of curry powder and stir until it begins to slightly dark and fragrant (not burnt)
6. Add cow foot to the pot and stir and cover for 10 minutes, After 10 minutes open pot and stir and cover for other 10 minutes
.
7. Add enough water to cover the meat (about 6 cups( add scallion, fresh garlic, and 3 sprigs of fresh thyme, cover the pot, and cook on medium heat for an hour.
8. After an hour stir and add 2 cups of boiling water and cover for another hour
9. After 2 hours, if the meat is not tender add enough boiling water to cover the meat
10. Meat should be tender in 2 1/2 to 3 hours, add butter beans, 1 sprig of fresh thyme and bell peppers abs and add salt to taste in the last 20 minutes of cooking
11. The skin of the meat should be falling off the bone, should be very tender. It will be gummy and the gravy should be thick and slightly sticky (very delicious over white rice)
