In this video, we show you how to make Sweet Potato and Crispy Quinoa Salad. This is a super delicious Sweet Potato Salad Recipe with Apple, Walnuts, Pomegranate and Crispy Quinoa. This Sweet Potato Salad is by far one of my most favourite Salad Recipes and we often serve it with Roasted Honey Chicken.
To make the Sweet Potato and Crispy Quinoa Salad Recipe, you will need:
half a bag of Baby Spinach (or a generous handful)
2 sweet potatoes (seasoned with salt, pepper, paprika and olive oil then baked at 250C for 20 minutes or until soft)
1 green apple
1/3 cup pomegranate
1/3 cup walnuts
salt
black pepper
cayenne pepper
For the Salad Dressing Recipe:
1 tsp minced garlic
1 tsp wholegrain mustard
3 tbs olive oil
1 tbs honey
2 tbs balsamic vinegar
lemon juice
To make the Crispy Quinoa:
1/2 cup Quinoa
1/2 cup water
salt and pepper to taste
1 tbs olive oil
Cook on medium heat stirring regularly, until the quinoa becomes crispy. This will take about 20 minutes.
Quinoa is a superfood that is extremely beneficial for your health. We are not always too keen on cooked quinoa recipes, however, when you try crispy quinoa, it just changes the game completely. In this recipe, the crispy quinoa provides a crunchy texture and a nutty flavour, rather than being just a grain in a salad. We highly recommend that you give this technique a go to liven up your salads!
