How to make quick and easy 'Smash Burgers'.

It all starts with the beef. Pick some ground beef that's got some fat in it.
super lean beef tends to dry easier and just isn't as good.
i like to go with 80/20, sometimes 75/25 if the store has it.
I wont use anything leaner than 80/20 unless i have to.
Form the beef into rough ball shapes but don't overwork it.
The less you do to it the better.
in addition to the beef, you are going to need salt and pepper, oil, and cheese if you'd like it.
For these, i also decided to toast the buns, so you'll also need butter and bread.
I'm cooking this on my camp chef sidekick with the included cast iron griddle.
you can do it with a cast iron skillet, or any nice heavy skillet or griddle.
i like to cook outside when possible to keep the mess out of the house.
it's a real simple process.
get your cooking surface nice and hot.
butter and toast the buns, moving them off to the side when done to your liking.
Throw some oil down and coat your surface with it
throw down a few patties and smash!
salt and pepper to your liking
let it go for about 2-3 minutes on the first side
flip, and add cheese, letting them go until the cheese is melted
pull - and serve
it's that simple.
I like to double them up as they are thin and I don't use a lot of other stuff on my burgers.
These remind me a lot of 5 guys burgers.
