🎁Need a last-minute gift? This simple yet exotic marmalade jam takes just about an hour to make from prep to finish! And uses pantry staple ingredients -besides the fresh oranges !
This recipe makes around six 8-oz jars!
INGREDIENTS
🍊Oranges (2 lb) - I used Navel, but any kind works!
🍋1 lemon
💦 1/3 cup water
🍵4 cups sugar (add 3.5 if you like it less sweet!)
1-inch piece ginger (optional)
METHOD
1️⃣Remove zest from a couple of oranges, squeeze the juice from the lemon and keep aside.
2️⃣Chop oranges. If the pith (white part) is too thick, remove it from a couple, but know that this is the part that contains pectin which helps it gel, so you do need most of it!
3️⃣Blend in a food processor with OPTIONAL (but highly recommended!) 1 inch piece of ginger
4️⃣Place in a large saucepan on stove and add water, lemon juice, sugar and zest and bring to a boil on high heat.
5️⃣Reduce heat to medium, and cook until temperature reaches 220° F or 104° c. Don't forget to stir frequently to prevent sticking/burning.
6️⃣Spoon into jars, and let it cool to room temperature, or do a hot water bath canning (which is what I did!)
I love it best on a slice of toast with butter. But it is wonderful to add as a glaze or citrussy ingredient to baked goods, or on meats and sea food!
