RECIPE:
WHITE KIDNEY BEAN SOUP
RECIPE
Prep Time 20 minutes
Cook Time 1 hr
Total Time 1 hr 20 minutes
Makes 6 servings
1 Cup white Kidney beans
Water to wash and soak the beans
5 Cups water
1 Tbsp. chicken seasoning
2 Cups low sodium chicken stock
2 Tbsps. butter
1 large onion peel and dice
4 cloves garlic peel and dice
½ Tsp black pepper
2 Tsp salt
1 Cup Cooked chicken breast
6 small Pop choy
Bell peppers (optional)
Hot pepper( optional)
METHOD
Wash and soak the kidney beans in some water overnight
When ready to cook
Measure and prepare all the ingredients
By peeling and dicing the onion and garlic and washing the bok chop thoroughly
Heat the butter in a large saucepan over a medium low heat
Add the diced garlic and onions
Let them caramelized slightly
Add the kidney beans ,thyme chicken seasoning and black pepper and the water
Cover the pot and let it cook for 45 minutes or until the beans becomes soft and tender
Add the salt ,chicken broth ,bok choy ,bell peppers and the cooked diced chicken breast
Cook on low heat for five minutes to keep the vegetables form
Serve warm and enjoy
