This is a very easy recipe but fancy at the same time. It is very easy & convenient to cook. But at the same time it will most certainly impress your family & guests. You can make the stuffing with potatoes as well , but trust me cottage cheese does wonders in this recipe.

Stuffed Tomato Recipe (Serves 5-6)
For Stuffing:
• 200 grams cottage cheese
• ½ tsp salt
• ½ tsp coriander powder
• ½ tsp red chilli powder
• ½ tsp dry mango powder
• ½ tsp garam masala
• Fresh coriander leaves
For Gravy:
• Oil 3-4 tbsp
• Pulp of 6 tomatoes
• 1 whole tomato
• 10-12 cashew nuts
• 2 green chillies
• Paste of 1 medium sized onion
• 1 tsp salt
• 1 tbsp ginger garlic paste
• ¼ tsp turmeric powder
• 1 tsp coriander powder
• 1 tsp Garam Masala
• 2 tsp MDH Deggi Mirch
• 1 tsp Butter
• 1 tsp grated cottage cheese
• 1 tsp honey / sugar
• Fresh Coriander
Stuffing:
•Take the grated Cottage cheese in a mixing bowl add salt , coriander powder, red chilli powder, dry mango powder , garam masala & fresh coriander leaves. Mix well & keep aside.
Preparations:
•Wash & clean the tomatoes. Now cut off the top of the tomatoes with the help of a knife or a spoon, scoop out the seeds and pulp to get a cavity. Once it's done, keep the tomatoes aside.
•Stuff the tomatoes with the prepared stuffing. Dip them in water & cover the top with corn flour / refined flour. This will seal the tomatoes and keep the stuffing inside. Fry the tomatoes in oil till they are soft. Remove the skin after they cool down.
•Take 1 tomato & the pulp of the tomatoes, add 10-12 cashew nuts & 2 green chillies and blend in a paste.
•Make paste of 1 medium sized onion.
Gravy:
•In a pan add 3-4 tbsp oil. Add the onion paste cook for few minutes. Add ginger garlic paste & cook till oil seperates. Add salt & turmeric powder. Add tomato paste.
•After tomato puree is cooked add coriander powder, garam masala, deggi mirch. Mix well.
•Add butter & cook till oil seperates. Add hot water to adjust the consistency. Add some grated cottage cheese (optional). Add honey / sugar
•Add the peeled stuffed tomato & cover with gravy & let it cook for 10 minutes.
•Garnish with grated cottage cheese & fresh coriander.
Serve Hot with Chapati , Paratha , Naan , Rice.
