Choi Fan translates directly into veggie rice and is a popular dish in Shanghai: 上海菜饭. It's not a fried rice but extremely delicious nonetheless. My daughter loved the dish after her trip to Shanghai a few years ago and after trying it at a local Shanghai restaurant, I decided to try making it myself. And now there's no need to order it when we go out as she loves mine better than any restaurants!
Ingredients include:
- white rice (best with Jasmine rice, but not necessary)
- bok choy
- chicken breast
- bacon
- Chinese ham (optional but adds great flavour!)
- sausage
Seasoning: butter, chicken essence, corn starch, sugar, pepper, fish sauce
