Masgouf is an amazing traditional Iraqi grilled fish dish which can be found in many Iraqi restaurants. The authentic method is to butterfly the fish from the back side down, season and place it around an open wood fire until it’s cooked then the fish will be placed direct on the wood ambers for a few minutes. You can do this easily at home on a wood fire, BBQ or even in your oven.

RECIPE:
1 Whole fish, butterfly ’ed, 1 ground dried lemon, 6 Tbsp olive oil, 4 Tbsp tamarind, 1 Tsp turmeric, 1 Tsp smoked paprika, ½ tsp cayenne pepper, 1 Tsp ginger, 2 Tsp salt, 1 Tsp black pepper and 1 Tsp allspice.
