Brussels sprouts take on a sweetness when roasted and the air fryer makes quick work of it. I also like being able to cook the bacon in the same air fryer and having very little clean-up afterwards.

I am using an Instant Vortex Plus 6 Quart Basket Style Air Fryer [ Ссылка ]. Please adjust cooking times according to your make/model.

Today’s Ingredients:
4 oz thick cut bacon
1 lb brussels sprouts, trimmed and halved
1 medium red onion, cut into thick wedges
1 TB reserved bacon fat
1 TB balsamic vinegar
2 TB grated parmesan cheese
¼ tsp salt
pinch of black pepper

Instructions:
1. Cook the bacon: Place the bacon in a single layer and cook at 400° for 8-10 until crispy, flipping halfway if needed. Remove cooked bacon to a paper towel lined plate. Pour the accumulated bacon fat from the fryer basket into a heat-proof container.
2. Mix the veggies: In a large bowl, mix the brussels sprouts, red onions, and 1 tablespoon of the reserved bacon fat, stirring to lightly coat each piece.
3. Cook the veggies: Pour the veggies into the air fryer and cook at 375° for 14-16 minutes, shaking halfway, until the veggies have a nice char all over.
4. Finishing the dish: Pour the cooked veggies back into the large bowl. Add the balsamic vinegar, parmesan cheese, and salt and pepper. Stir to evenly distribute throughout the veggies and adjust the seasoning to your liking.
5. Serve and ENJOY!
