What's up BKC Fam! This time I'm trying something new. I found a beautiful pork butt and I wanted to do something other than sandwiches. I saw some humongous baking potatoes at @HEB and I got the idea to make these insane loaded potatoes. You can add any toppings you want, don't hold back! The whole cook is very simple, it just takes a bit of time. I used @Themeatstick to ensure perfect temperatures and I used the WiFi bridge to monitor everything while I was away from my @Char-Griller Gravity 980. The 980 did an amazing job as always. I used cherry wood chunks for flavor and lump charcoal from The Good Charcoal Company for fuel.

Jumbo Baking Potatoes
Season the pork butt thoroughly on all sides and insert @Themeatstickup to the black ceramic tip. Smoke the butt on 275 until it reaches an internal temperature of 165 degrees. Wrap the meat tightly in aluminum foil. Be sure to leave @Themeatstick exposed. Continue cooking the meat until it reaches 205 degrees. Remove the butt from the smoker and let it rest. Scrub and rinse the potatoes until clean. Heat your oven to 400 degrees. Poke several holes in each potato and place them directly on the oven rack. Cook the potatoes for 60-80 minutes until done. Remove the bone from the pork butt(it should come out clean) and shred the meat using two forks or shredding claws. Cut the potatoes in half lengthwise and add your desired toppings. Enjoy!
