ingredients:
1 1/2 cups of white medium grain rice
(Basmati is preferable)
1 1/2 cups water
1/2 cup tomato sauce
1 large diced onion
2 finely chopped garlic cloves
1 grated/chopped carrot
Parsley
2 tbsp olive oil
Seasonings/Spices:
1/2 tsp or to taste
-black pepper
-onion powder
-garlic powder
-cinnamon
-paprika
-cayenne pepper & red pepper flakes
-cardamom (or 2 pods)
-ground coriander & cumin
- mixed arab spice blend
Instructions:
• wash & soak rice for atleast 15-20 mins & no more than an hour
• sauté diced half the amount onions then garlic followed by seasonings
• drop pre- pressure cooked red meat to brown (time saving hack)
• remove meat and saute the remaining quantity of onions with veggies of choice followed by remaining seasonings
• add tomato sauce and simmer for 10 mins
• add bouillon cube or beef stock and salt
• drop the soaked rice after draining the water
• simmer on medium heat until water is reduced
• drop heat to low, cover with a kitchen cloth and lid for 20 minutes or until the rice is ready.
