Cacao beans (like coffee) are dried either on raised beds in the sun or by a mechanical dryer if weather conditions are unfavorable. During the sun drying process, the beans are spread about and raked for even drying. This takes approximately a week in good weather. Using a mechanical dryer is occasionally problematic. Since the machine is fuelled by wood fire, the cacao can sometimes pick up unpleasant, smokey flavor hints.
