Gustavo Romero of Nixta in Minneapolis, Minnesota, didn’t intend to open a tortilleria — he aspired to open a Mexican restaurant after 15 years of cooking the food of cultures that weren't his own. When the pandemic hit, those dreams were waylaid, but with a Molinito, some corn and a little tortilla machine, another dream was born. Gustavo knew that every city deserves a great tortilleria, and Minneapolis didn’t have one, so he got to work.
