Place room temp cream cheese into a ziploc sandwich baggie ,and zip up baggie and push some of the air out of the baggie.
Then push cream cheese into one corner of your baggie and cut the small tip off the baggie, we're going to use it a a piping bag and the cream cheese is like your glue to hold the pumpkin pie shapes all together. and set aside till needed.
Cut cheddar cheese into thick slices.
Then take that cheese slice and cut triangle shapes out of it for your little pie shapes.
Then take a chicken biskit crackers and place your cheese shape triangle on it like a template and take knife and cut the cracker the same shape as triangle.
Now take another cracker and cut a wide strip off that's gonna be the back of the pie slice.
It’s time to put the ‘pies’ together!
Place the triangle cheese slice onto the triangle shaped cracker you made, using a thin line of cream cheese to attach it together. Now take the wide cracker strip you cut and do the same using a thin line of cream cheese to attach to the back of the pie slice.
In the center of the cheese, squeeze a dollop of cream cheese. It will look just like you topped your pie with whipped cream.
Now plate all your cheddar pie slices on a plate or a nice platter for serving.
