Myeolchi Bokkeum or in English Stir-Fried-Anchovies, is one of the most common side dish in Korea. Due to longevity for at least a month in the refrigerator, is what makes this side dish so popular, especially for Korean lunch boxes.
My version of this Banchan (side dish) includes mixed Nuts (Peanuts, Walnuts, Pumpkin Seeds, and Sunflower Seeds).
I highly recommend this quick.easy.recipe appetizer that has a mix of sweet, savory, nutty, and crunchy taste.

Ingredients:
• Small Dried Anchovies (227g or 8oz)
• Peanuts 2/3 cup
• Walnuts 1/2 cup
• Pumpkin Seeds 1/4 cup
• Sunflower Seeds 1/4 cup
• Sesame Oil 3 tbsp
• Garlic (minced)
• Brown Sugar 5 tbsp
• Soy Sauce 1 tsp (optional)
• Mirin 1 tsp (rice wine)
• Corn Syrup 3 tbsp (can subs. to Honey, Molasses, or any sweetener of your choice)
• Water 1 tsp
Instructions:
I. Stir fry the mixed nuts until lightly brown
II. Then add the small dried anchovies, stir until light brown and crunchy
III. Add sesame oil and sauté the minced garlic
IV. Add the remaining seasonings (brown sugar, soy sauce, mirin, corn syrup and water)
V. Mix well and cook until all becomes a little bit sticky and golden brown
VI. Let it cool down before refrigerating
• Keep in the fridge up to one month
• Pair with other side dish
