[RECIPE BELOW] Coconut Flour Chocolate Muffins.
These muffins are a tiny bit higher in carbs than other keto muffins I've made - they are 4 net carbs a muffin. BUT because these use coconut flour, they are a lot more filling than many other muffins on this channel. They're also no massively sweet, so double the sweetener if you have a big sweet tooth!

INGREDIENTS:
- 4 Large Eggs
- 6 tbsp Salted Butter, melted
- 1/4 cup Sweetener (I used Erythritol)
- 2 tsp Vanilla Extract
- 1 & 1/4 cups (300ml) Unsweetened Almond Milk
- 1 cup (128g) Coconut Flour
- 1/2 cup (120g) Cocoa Powder (ALWAYS CHECK CARBS BEFORE BUYING)
- 1 tsp Baking Soda / Bicarbonate of Soda
METHOD:
1. Preheat oven to 180c/350f. Prepare 12 muffin cups.
2. In a large bowl, beat the eggs. Then, whisk in the butter, sweetener, vanilla, and almond milk.
3. Then whisk in the coconut flour, and then the cocoa powder and baking soda.
4. Divide the batter evenly among the 12 prepared muffin cups.
5. Bake for 18-20 minutes or until a toothpick inserted in the center comes out "clean".
6. Cool the muffins 10 minutes in the cups, then cool on a cooling rack for at least 30 more minutes - the muffins taste much better when they’ve had a chance to cool and set.
