Mosa is a strong staple in every small chops basket at Nigerian wedding these days. Small chops are also known as appetizers in Nigerian lingo. Their flavour profile borders on sweet and savoury. They are typically made from over-ripe plantain and I think it's the best way to avoid food wastage when recipes like these are created. Enjoy my comical rendition of the Mosa recipe not to be confused with Masa.
Recipe:
2 Medium sized Fingers of Plantain
A handful of Onions
1-2 Scotch Bonnet Peppers (Substitute Chilli Powder)
3/4 cup of Water
3 heaped tablespoons of Flour
1 seasoning cube
Salt to taste
Method
In a clean bowl, peel your plantain and mash till fairly smooth.
Add your flour and mix with the mashed plantain.
Pour in your pepper, onions, seasoning cube, salt and water.
Blend and transfer back into a bowl and beat to incorporate air.
Heat up your oil and fry your mosa in small round balls until golden brown.
