Pumpkin Risotto Recipe

RECIPE (for 4 people):
300 g rice (carnaroli or arborio) - 1 cup + 1/2 cup
500 g diced raw pumpkin (17.64 oz) - 4 cups
1.5-liter water or broth - 6 cups + 1/4 cup
40 g butter or olive oil - 3 tbsp
30 g parmesan - 1/4 cup (omit it if you eat dairy-free)
1 onion
15 ml olive oil - 1 tbsp
80 g white wine (or broth) - 1/3 cup
salt & pepper
sage (optional)
