INGREDIENTS:
• For the Pastry Dough
Eggs: 2 medium, cold from the fridge (110 g)
Flour (00): 4 cups (500 g)
Powdered Sugar: 1 cup (200 g)
Cold Butter: 1 cup (250 g)
Lemon Zest: To taste
• For the Cream Filling
Whole Milk: 2 cups (500 g)
Sugar: 2/3 cup (130 g)
Egg Yolks: 7
Rice Starch: 1/3 cup (40 g)
Vanilla Bean: 1
Lemon Zest: To taste
• For the decoration
Almonds or pine nuts to taste
INSTRUCTIONS:
Prepare the Cream: Boil the milk with the vanilla bean and lemon zest. In a separate bowl, whisk the egg yolks with the rice starch and sugar. Once the milk starts boiling, pour it into the egg yolk mixture while stirring. Cook the mixture over heat until it thickens. Cover with plastic wrap and refrigerate.
Prepare the Pastry Dough: Combine all the ingredients in a mixer at moderate speed for about 5 minutes until a smooth, homogeneous dough forms. Roll out the dough and cut out a 9-inch (22 cm) circle. Pre-bake this circle for 6-7 minutes.
Assemble the Cake: Take the cream out of the fridge and spread it over the pre-baked dough. Cover with another circle of dough, slightly larger (10 inches/24 cm). Brush with egg, sprinkle with almonds (or pine nuts), and bake for an additional 10 minutes.
