Welcome to Episode 4 of Part 3 of The Dining Traveler Cooking Series! In this edition, we "travel" to Puerto Rico to make our favorite Puerto Rican holiday dishes, shot on location at La Cosecha, a contemporary Latin American market in Washington, DC. A must-have holiday dish is Pasteles. For this video, we are making pasteles de yuca. Yuca, a delicious and versatile root vegetable, is the protagonist of this dish. I stuff the yuca with savory stewed pork. If you want to try to make vegan pasteles, I recommend replacing the pork with chopped eggplant - just as yummy.
Pasteles are very time consuming and I highly recommend getting your family or friends together to help prepare them. It's helpful to have stations where a person is in charge of assembling each stage. Making pasteles brings back great memories of making them with my mom and aunts. I hope making these pasteles brings you a taste of home, especially for those who cannot travel this holiday season.
Many countries in Latin America have their own versions of pasteles or tamales. We check in with Gabriela Febres, owner of Arepa Zone who tells us all about the hallacas venezolanas.
Recipe:
Guiso (Stew):
This recipe yields stuffing for around 100 pasteles with the guiso recipe.
8-9 Lb Pernil
2 tbsp of annatto seed oil
1/3 cup sofrito
1/2 cup tomato sauce
1/2 cup pitted olives, Spanish style
1 tbsp of Adobo
1/2 teaspoon of sazón (double if it doesn't have MSG)
2-3 Bay Leaves
Salt and Pepper to Taste
Leftover Broth of cooked pernil
Masa:
(This makes 14 pasteles) You can double/triple the recipe for more masa
Tip: You can also use the guiso to stuff alcapurrias, relleno de papa, and it even works with white rice and tostones.
4 Lb Yuca (you can buy it frozen)
3/4 Cup Evaporated Milk
1 Tbsp Annatto Seed Oil
1 Tsp Adobo
1 Tsp Sazón
To Assemble The Pastel:
Banana Leaves
Parchment Paper Sheets
Kitchen Twine
Annatto Seed Oil
Scissors
