Pho Ga, The sister to the more popular pho bo is a Vietnamese staple.
It's easier, quicker and lighter in flavour but still effing yum.
Today the recipe is a little long but so worth the watch.
2 small brown onions unpeeled
1 piece of ginger the size of two fingers
2 shallots
1 tbsp coriander seeds
3 cloves
2 star anise
1 stick of cinnamon
2 black cardamom pods
1 whole free range chicken or walking chicken (asian butchers will know what a walking chicken is)
300g of diakon
6 litres of water
2 tbsp of fish sauce
1 ½ tbsp of rock sugar
2 tsp of salt
½ a bunch of coriander stems and roots ( reserve leaves)
thai basil to serve
bean shoots to serve
fresh sliced chilis to serve
hoisin and sriracha to serve
