This cassava cake recipe is my favorite. Cassava cake is a classic Filipino dessert made from fresh or frozen grated cassava with a custard or caramel on top. Cassava cake recipe is commonly made for snacks and is best served with coffee. Cassava cake is served during special occasions and festivals. Cassava is also known as kamoteng kahoy and balinghoy in the Philippines. Cassava starch is also used to make tapioca. How to make cassava cake
In a large bowl - combine grated cassava, evaporated milk, condensed milk, sugar, melted butter, cheese and coconut milk. Mix well until sugar is dissolved but don't overmixed. Pour batter in a greased baking pan. Preheat oven and bake at 350 degrees for 60 minutes.
For the toppings
mix condensed milk, evaporated milk, sugar ,coconut milk, cheese and spread it evenly on top of baked cassava cake. Put back in the oven and broil on low temperature until light brown. Remove from the oven and let it rest for 15 minutes .Cut in desired sizes and serve. Enjoy!
Ingredients (for the cassava cake batter)
2 packs grated frozen cassava
2 cups coconut milk
3 whole eggs
1/2 CAN evaporated milk
1/4 cup butter
6 tablespoons cheese
1/2 CAN condensed milk
200 ml white sugar
For the custard topping
2 tablespoons flour
2 tablespoons sugar
1/2 can condensed milk
2 tablespoons cheese
1 CAN coconut milk
