The Pioneer Woman on the Food Channel is one awesome lady. Everything she makes on her show makes my mouth water. A couple weekends ago while I was at the gym, I saw her make this glorious gem of a dish. Yes, I'm the weirdo on the treadmill/eliptical/bike that watches delicious and fattening food being made in front of me while I'm burning calories. It makes you work out harder...if I work out for 20 more minutes at a higher level I can eat that...makes complete sense in my book. You'd be a fool not to try this dish. If you don't eat red meat then make it with ground turkey and turkey bacon. I'm sure it would still be super delicious, but make sure to cook it for less time.
Ingredients:
Meatloaf:
1 cup 2% or whole milk
6 slices of white bread (I used GF bread for this and it worked well)
2 lbs. ground beef
1 cup shredded parmesan cheese
1/4 tsp all-purpose seasoning
1/3 tsp salt
Freshly ground black pepper
1/3 cup minced parsley
4 whole eggs
About 10 slices of bacon
Sauce:
1.5 cups ketchup
1/3 cup brown sugar
1 tsp dry mustard
Dash of Worchestershire sauce
Several dashes of hot sauce
