This cake is easy to make and the yogurt makes a lovely fluffy cake! It can also be made a few days ahead of time!

INGREDIENTS:
-1 1/2 cups self raising flour
- 1 1/2 cup sugar
- 3/4 cup Greek yogurt
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- A pinch of salt
METHOD:
Preheat oven to 180°C (350°F)
Line and grease a standard 10" cake tin
Into a large bowl, sift the flour, sugar and salt.
Whisk through until combined.
Add the Greek yogurt, vegetable oil, eggs and vanilla.
Whisk thoroughly, until smooth and well combined.
Fill prepared tin with mixture, level the top.
Bake for 50-55 minutes, or until top of cake is golden brown and a skewer inserted comes out clean.
Once the pan is cooled enough to touch, take out the cake and leave on a rack to cool completely.
Eat and enjoy!
