Chimichurri is a super fresh and flavourful condiment, great with roasties or even used as a marinade. It only takes 5 minutes to make and no cooking at all! My version uses fresh parsley, oregano, garlic, oil, vinegar, chili flakes, salt, and pepper, though the variations on this theme are endless (some people also use onions and/or coriander, sometimes even thyme).
Ingredients:
30 g parley (20 once chopped)
1 clove garlic
100 ml extra virgin olive oil
30 ml red wine vinegar (white wine is also fine, if you don’t use wine vinegar for any reason you can replace it with other vinegar or lemon juice)
1 tablespoon dried oregano (or fresh if you find it)
1 teaspoon chilli flakes
1 teaspoon salt
1/2 teaspoon black pepper
