When it comes to chaats, every city has its own style, and Shimoga is no different. Be it the masala puri, sev puri or paani puri, each one hits differently as I discovered during this outing to DVS Circle Pani Puri, a chaat shop that has held sway over the city’s penchant for its spicy fare for nearly four decades. I was told these unique flavours were a result of Shimoga’s purveyors not being influenced by chaat traditions of the North and therefore developing a unique palate of their own.
