2lbs Short ribs (Flanken / Korean Style)
2 tsp black pepper
2 tsp garlic powder
2 tsp paprika
1 tsp salt

1 onion
1/4 cup ketchup
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup brown sugar
4-6 cups veggie broth

Bring to a boil, drop to a simmer and cook for 2-3 hours or until tender and fall off the bone.

Pickled onions:

1 red onion
1 cup water
1 cup white vinegar
1 Tbsp pickling spice
1 Tbsp salt

Mayo:

1 egg
2 tsp Dijon mustard
1/2 lemon juice
1 cup neutral oil
1-2 chipotle peppers in adobo


This makes 4-6 large sandwich’s
8-12 sourdough bread slices

For each sandwich:
Use 1 oz white/ yellow cheddar and Monterey Jack cheese
