Partner and Food Editor Silvana Franco makes these sticky toffee date puddings. These individual puddings are simple to make and definitely worth the effort. The treacle and double cream in the sauce make it extra sticky. Serve with a scoop of ice cream for an indulgent treat. Ideal all year round or a great alternative to traditional Christmas pudding.
Ingredients:
100g unsalted butter, softened, plus extra for greasing
250g pitted dates, chopped
100ml whole milk
150g light brown soft sugar
2 tbsp treacle
3 eggs
2 tsp vanilla extract
180g plain flour
1½ tsp baking powder
vanilla ice cream, to serve
TOFFEE SAUCE
100g light brown soft sugar
100g salted butter
120ml double cream
1 tbsp treacle
