Lechon Asado / Roast Pork
Ingredients:
4 pounds Boston Butt pork (deboned) cut into large cubes
1 tbsp. oregano
1 tbsp. coriander
1/2 tbsp. ground cumin
2 tbsp olive oil
salt & pepper to taste
1 large yellow onion, sliced
10 cloves of garlic, chopped
1 bottle pre-made Mojo (20 oz.)
Directions:
Instant Pot in sauté setting. Add olive oil, Brown pork, remove and set aside.
Add onion and garlic, sauté till translucent.
Return browned pork to Instant Pot. Add Mojo. Place on meat/stew setting for 60 minutes.
Let presume release naturally. Place pork on serving dish.
Frijoles Negros / Black Beans
Ingredients:
3-15oz cans of black beans. rinsed
1/2 yellow onion, chopped
1 jalapeño, chopped
1 tbsp. chopped garlic
1/2 tbsp ground cumin
1 tbsp white wine vinegar
salt & pepper to taste
1-32oz container chicken stock
Directions:
Sauté onion, jalapeño, and garlic till translucent.
Add rinsed black beans, cover with chicken stock. Simmer and cook till tender, 20 minutes.
Arroz Blanco / White Rice
Ingredients:
2 tbsp olive oil
1 tbsp butter
1/2 yellow onion, chopped
salt & pepper to taste
2 cups rice
4 cups chicken stock
Directions:
Saute onion in olive oil and butter. Add rice and stir to cover rice with the fat.
Add chicken stock, bring to boil, reduce to a simmer, cover and cook per package instructions.
Yuca con Mojo
Ingredients:
1 package prepared frozen yuca
1/2 cup of prepared Mojo.
salt to taste
Directions:
Boil yuca in salted water till tender.
Drain in sink. Place in serving dish and pour Mojo over the top.
Tostones
Bake frozen Tostones 400 degrees for 25 minutes.
Maduros / Sweet Plantains
Bake frozen Maduros at 350 degrees for 20 mintues.
