Dough-
-500 grams 00 flour
-1.5 grams instant dried yeast
-13 grams sea salt
350 grams water
Combine water and yeast and whisk to bloom your yeast. Add your flour and salt to a mixer, add in your yeast water and mix on medium for 2-3 minutes or all flour is absorbed. Target temp after mixing is 80 degrees. Let the dough rest for 20 minutes. Knead for 30 seconds to 1 minute. Hold the dough for 2 hours at room temperature. Divide the dough into 3 equal sections weighing about 280 grams each. Shape into dough balls, add to proofing container, and into the fridge for 24-48 hrs. Remove from fridge for 1 hour before baking.
