This chicken and leek stew requires very minimal ingredients that are cheap and easy to get which together, create an absolutely delicious meal. This stew recipe is one of my favourite recipes to date. I cant wait for you to try it.

Serves - 2-4 People (Depending On Portion Size)
Ingredients -
2 Tbsp (40ml) - Olive Oil
1.2kg (2.6lbs) - Chicken Thigh, Bone In, Skin On
4 - Shallots, Roughly Chopped
400g (14.1oz) - Swiss Brown Mushrooms, Halved or Quartered
180ml (3/4 Cup) - Verjuice or Chicken Stock or White Wine
2 Tbsp (40g) - Wholegrain Mustard
2 - Leeks, Washed & Roughly Chopped
15g (0.5oz) - Tarragon, Picked
600ml - Chicken Stock
Seasoning To Taste
Basic Mashed Potato -
1kg (2.2lbs) - High Starch Potatoes, Peeled
80g (2.8oz) - Unsalted Butter, Softened
180ml (3/4 Cup) - Full Fat Milk, Warmed
Seasoning To Taste
Tarragon Crisps (Optional) -
1 Tbsp (20ml) - Olive Oil
15g (0.5oz) - Tarragon, Picked
Seasoning To Taste
