Using matcha mousse and mochi, I made these daifuku bites. I find that the texture of mochi and the taste of matcha are a great combination. Please try them out!

Ingredients (for 15 mochi) :
For the mousse filling :
- 5g matcha powder
- 2 tbsp boiling water
- 100g heavy cream
- 25g sugar
- 25g white chocolate
- 2.5g gelatine sheets
For the mochi :
- 110g glutinous rice flour
- 200ml water
- 50g sugar
- 2 tsp glucose syrup
For the green mochi (this is decorative, skip it if too much work) :
- 18g glutinous rice flour
- 2g matcha powder
- 40ml water
