*Also one of the things I forgot to mention, don't forget to wipe down the jar mouth before you put the lids on so they seal properly!
We Love using this Pizza Sauce Recipe for pizza and spaghetti and meatballs!
Strainers:

Pizza Sauce Recipe
* 1/2 bushel tomatoes
* 9 onions
* 2 hot peppers (I skip this)
* 2 whole garlic cloves
* 1 cup oil
* 2 cups sugar
* 1/2 cup salt
* 6 bay leaves
* 48 oz. tomato paste
* 4 tbsp. oregano
* 4 tbsp. parsley flakes
yields aprox. 26 pints
Directions:
1. cut and then cook tomatoes, onions and garlic until tomatoes are soft. then run through strainer
2. put sauce back on stove and simmer for 1 hour
3. Add remaining ingredients and cook another hour
4. Let the sauce continue to simmer and Pour into hot jars with hot lids. will seal without water bath.

Tomato Juice:
1 bushel tomatoes (yields aprox 48 pints)
*cut up tomatoes, cook until soft, then run through strainer
* put juice on stove to simmer, and then pour hot juice into hot jars with hot lids. Screw on the rings. (no canning needed. this will seal on it's own)
