Description,
Ash gourd curry is a popular vegetarian dish in Sri Lanka made with ash gourd, also known as winter melon or white pumpkin. The ash gourd is first cut into small pieces and boiled until tender. In a separate pan, a blend of aromatic spices such as cumin, coriander, turmeric, chili powder, and mustard seeds are sautéed in oil until fragrant. Chopped onions and garlic are then added and cooked until softened. The boiled ash gourd is then added to the spice mixture, along with coconut milk, salt, and curry leaves, and simmered until the flavors meld together. It is typically served hot with steamed rice, bread, or other accompaniments.
Nutrients of vitamin B group, protein, vitamin C etc. are available in ash. Ashpoool, which is very low in fat, also contains minerals such as sodium, calcium, phosphorus, iron, etc. Alupuhul, a water-rich vegetable, has only 10 calories per 100 grams. Popular among vegetarians, Ash Puhul is also widely used to prepare rasams and soups.
