A little about the tamales, if you've never seen tamales in the banana leaf you are missing out. Seriously, so good! They are thinner and softer, they kinda melt in your mouth. Theres not much to them but very delicious. Theres plenty of ways to make them, this is my moms recipe.
Algo sobre nuestros tamales es que son mas delgaditos, y suavecitos. como que se derriten en tu boca. No tienen tantos ingredientes pero saben delicioso.
Ingredients / Ingredientes.
Meat- Chicken / pollo ( but you can use any, pero Zambian pueden usar cualquier carne que quieran.
SAUCE/SALSA :
Chile morita
Cinnamon
Tomatos
Ojas de pimienta / pepper leaf (You don't need the leaf im sure you could use the pepper you have at home.
water or broth / Agua oh caldo.
DOUGH / MASA
Mazeca - mix for tortilla or tamales
Oil/Aceite - My mom doesn't use measurements so kinda eye it! LOL
Broth/ Caldo - same thing , eye it.
-To mix your dough starts with mixing everything together, mix it up until there is no dough sticking to your hand anymore.
Before you start adding the masa on the banana leaf make sure to boil your leafs for a good 20-30mins. Until they are a lighter color.
then once you have the dough, leafs and chicken ready start your prep.
Once you place your tamales in your pot you leave them in for 40mins or more. the pot needs some water under neath. There needs to something to separate your tamales and water. The tamales will cook from the steam.
and remember like I said our tamales are soft, but delicious enjoy!
-Para preparar tu masa tienes que empezar con todo, al principio la masa se pegara a tu mano. cuando este lista la masa ya no se pegara a tu mano.
antes de que empieces a echar la masa a la oja tienes que herbir y dejar en agua las Ojas por 20-30mins.
cuando ya tengas todo listo prepara tus tamales.
en una oya con agua, deja cocinar tus tamales por 40- oh mas minutos. El agua no tiene que tocar los tamales, pero el vapor del agua cocinara tus tamales.
