Pastitsio - ingredients:
– 300 g ground beef
– 1 onion
– 1 carrot
– 1 garlic clove
– 1 tsp thyme
– 1/2 tsp cinnamon
– 1/2 glass wine
– 250 g passata
– 100 g feta
– 50 g cheddar
– 50 g parmesan
– 700 ml milk
– 60 g corn starch
– 1/2 tsp nutmeg
– 180 g tubular pasta
– 2 eggs
– Salt
– Black pepper
– Parsley
– Olive oil
Procedure:
1. Chop an onion and a carrot and sauté them in a saucepan with olive oil
2. Once the onion and carrot have softened, add 1 minced garlic clove, then 300 g beef, 1/2 tsp cinnamon, 1 tsp thyme, salt and black pepper; stir and let the meat brown, then add half a glass of wine and let it evaporate
3. Add 250 g passata,1 bay leaf and a glass of water, bring to a boil, then let it simmer for about half an hour on low heat
4. In the meantime, prepare a bechamel sauce: combine 700 ml milk with 60 g corn starch in a saucepan off the heat, also add 1/2 tsp salt and 1/2 tsp nutmeg, and then transfer it on the hob and stir until the sauce thickens
5. Cook 180 g ziti, bucatini or macaroni in salted water, very al dente (i.e. about 3 minutes less than their cooking time)
6. Once the ragout is cooked, add a bit of chopped parsley and 3 tbsp of the bechamel sauce to it and mix it; add 1 whole egg and 50 g grated parmesan cheese to the remaining bechamel sauce
7. Strain the pasta and mix it with a bit of olive oil in an oven tray; also add 100 g crumbled feta, 50 g grated cheddar and 1 egg; add a layer of ragout, then cover everything with the bechamel sauce and grate some more parmesan cheese on top
8. Bake in the oven at 180°C for 35-40 minutes, or about 25 minutes in the air fryer, until golden on top
9. Let it cool down for at least 30 minutes before serving, to allow the bechamel layer to settle; enjoy!
