We recently ordered a pothichoru from Chef Pillai's restaurant, eager to experience their take on this classic dish based on the positive reviews. While the flavors were good, there's room for improvement to fully capture the richness and depth we associate with traditional pothichoru.
The Fish Fry, for instance, had a mild flavor. Perhaps a slightly bolder spice profile could elevate it. Additionally, the rice seemed to absorb moisture from the Avial and other accompaniments. Traditionally, pothichoru features drier side dishes that maintain the texture of the rice.
Chef Pillai's reputation precedes him, and we'd love to revisit in the future to try a pothichoru that leans closer to the robust flavors and textures we know and love.
