400g round shallots, peeled and halved
1 tbsp vegetable oil
1 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
1 tsp cayenne pepper
½ tsp turmeric
Salt and pepper, to taste
4 tbsp thick Greek yoghurt
Zest and juice of 1 lime
Handful of mint, finely chopped
2 garlic naans
100g grated cheese (we used paneer)
Red cabbage, finely sliced
Mango chutney
Fresh coriander
Preheat the oven to 180C. Toss the shallots in a large baking tray with the oil, spices and seasoning. Roast for 20-25 minutes until soft and golden.
Mix the yoghurt, lime zest and juice, and mint together in a bowl with seasoning.
Lay the garlic naans on a baking tray and top with the grated cheese, cook according to pack instructions.
To assemble – spread each naan with the yoghurt mixture and top with the roasted shallots, red cabbage, dollops of mango chutney and fresh coriander.
