Ingredients:
For the dough:
•500 g all-purpose flour
•1 packet dry yeast (or 25 g fresh yeast)
•60 g sugar
•1/2 tsp salt
•250 ml warm milk
•80 g unsalted butter, softened
•1 egg
For the cream cheese filling:
•200 g cream cheese
•50 g sugar
•1 tsp vanilla extract
•Lemon zest
For the blueberry filling:
•200 g fresh or frozen blueberries
•30g sugar
•1 tbsp cornstarch
•1 tbsp lemon juice
For brushing:
•1 egg (lightly beaten)
•Optional: powdered sugar for dusting
•Streusel (optional)
Instructions:
1. Prepare the dough:
•In a large bowl, combine the flour, sugar, and salt.
•Add the dry yeast (if using fresh yeast, dissolve it in a little warm milk first).
•Pour in the warm milk, add the softened butter and egg.
•Knead the dough by hand or using a mixer with a dough hook for about 8-10 minutes, until smooth and elastic.
•Cover the bowl with a cloth and let the dough rise in a warm place for 1 hour or until it doubles in size.
2. Prepare the cream cheese filling:
•In a bowl, beat the cream cheese, sugar, vanilla extract, and lemon zest until smooth and creamy. Set aside.
3. Prepare the blueberry filling:
•In a small saucepan, combine the blueberries, sugar, cornstarch, and lemon juice.
•Cook over medium heat, stirring, until the mixture thickens slightly and the berries burst, about 5 minutes.
•Let it cool completely before using.
4. Shape the buns:
•Once the dough has risen, punch it down and divide it into 12 equal pieces. (70g) each
•Roll each piece into a ball and flatten slightly into a small disk.
•Place a tablespoon of cream cheese filling and a teaspoon of blueberry filling in the center of each disk.
•Pinch the edges together to seal the filling inside and gently roll back into a ball.
•Place the filled buns on a baking sheet lined with parchment paper, seam side down.
5. Final rise:
•Cover the buns with a cloth and let them rise for another 30minutes.
6. Bake:
•Preheat the oven to 180°C (350°F).
•Brush the tops of the buns with the beaten egg.
•Bake for 20-25 minutes, or until the buns are golden brown.
7. Optional:
•Dust the buns with powdered sugar before serving.
