This easy to prepare Greek vegetable moussaka recipe is super tasty with an abundance of flavoursome ingredients. Best of all, this recipe uses frozen pre-prepared vegetables to make it simple to prepare. This vegetarian moussaka recipe is layered with aubergine (eggplant) and potato, like the traditional recipe.
To make this Greek recipe even simpler, I also use pre-prepared white sauce and mix cheese and egg into it. This vegetable moussaka will feed 6 and keep you all full for ages. You can also use your air fryer to pre-bake the potato and aubergine (eggplant) to speed up the prep.

• Oil (to fry)
• 100g Frozen chopped onion
• 2 Garlic cloves (chopped)
• 1kg Frozen chopped mediterranean vegetables
• 1 tbsp Tomato puree
• 2 Cans chopped tomatoes
• 1 Vegetable stock cube
• 2 tbsp Oregano
• 150ml Red wine
• 2 Aubergines
• 600g Potatoes
• 1 650g Jar white sauce
• 1 Large egg
• 75g Grated parmesan
