Ingredients
• 1/2 cup plain or Italian breadcrumbs
• 2/3 cup milk
• 1 pound of ground beef or pork
• 1/2 onion, grated
• 1 large carrot, grated
• 2 large eggs
• 1 tbsp garlic, minced
• 1 tsp black pepper
• 1 tsp salt
• 2 cups tomato sauce of choice
• Parmesan cheese, for garnish
• fresh parsley, for garnish
Instructions
• Preheat oven to 400 degrees and line a baking sheet with parchment paper.
• In a large mixing bowl, combine breadcrumbs and milk until combined. Set aside.
• Prepare ingredients accordingly. Once ingredients are prepared, add ground beef, onion, carrot, eggs, garlic, salt and pepper to breadcrumb mixture. Using your hands, mix together ingredients until just combined without over mixing.
• Using a muffin or ice cream scoop, portion out meatballs rolled into 2” balls (makes about a dozen meatballs).
• Bake for 22 to 24 minutes, turning halfway through, until meatballs are browned and reach internal temperature of 165 degrees F.
• Remove from oven and serve with favorite tomato sauce. Sprinkle with Parmesan cheese and garnish with parsley, if desired.
