Paneer layer covered with minced chicken layer on satay sticks and cooked in a pan
KHAAS SEEKH
Ingredients
1 cup crumbled cottage cheese (paneer)
2 tsps cornstarch
Salt to taste
2 tsps ginger-garlic-green chilli paste
5-6 fresh mint leaves
A pinch of white pepper powder
A pinch of green cardamom powder
1 cup chicken mince (keema)
2 tsps chopped garlic
2 tsps chopped ginger
1 tsp chopped green chilli
¼ tsp garam masala powder
½ tsp chaat masala
2 tsps melted ghee
2 tbsps oil
½ lemon
Method
1. Put crumbled cottage cheese in a bowl, add cornstarch, salt and ginger-garlic-green chilli paste.
2. Chop mint leaves and coriander leaves and add along with white pepper powder and green cardamom powder and mash while mixing together.
3. Take a small portion of this mixture, shape into a long tube and insert a satay stick through the middle. Press it lightly. Place the satay sticks on a plate and keep it in the refrigerator.
4. Put chicken mince in another bowl, add garlic, ginger, green chilli, garam masala powder, chaat masala, salt and melted ghee and mix well.
5. Take the cottage cheese out of the refrigerator.
6. Dampen your hands, take a portion of chicken mixture and pat it over the cottage cheese layer on the satay sticks.
7. Heat oil in a non-stick grill pan, put the satay sticks in it and cook, rotating the sticks for even cooking. Cook till they turn a light golden brown all around.
8. Drain from the pan, place on a plate, remove the satay sticks.
9. Halve them diagonally, arrange on serving plate. Squeeze the lemon over them and serve hot.
