Indonesian Chicken Cooked In Spiced Coconut Milk aka Opor Ayam
Ingredients:
550g chicken
500g peeled potatoes
200ml coconut milk
1/2 cup oil
1 liter water
2 lime leaves
2 bay leaves
1 tbsp brown sugar
1 tbsp mushroom powder
1 tsp turmeric powder
1 tsp pepper
Salt
Spice Paste:
2 big red paprika
4 garlic
3 shallots
Instructions:
- using a food processor or a pestle and mortar, grind all the spice paste ingredients into a smooth mixture.
- Heat the oil in a cooking pan or a wok and stir-fry the spice paste.
- Add in bay leaves and lime leaves. Continue cooking the spices until it releases a delicious aroma.
- Then put the chicken pieces in and peeled potatoes. Stir a little until all pieces are coated with spices.
- Pour the coconut milk and the water into the chicken. Give it a good stir, then put the lid on. Cook it at low heat for about 30 – 45 minutes or until the chicken becomes tender and the oil slightly separates from the liquid.
- Serve with rice. Enjoy!
