Ingredients -
1/4 cup kair
1/4 cup Gonda
1/4 cup dry amla
1/4 cup kachri
1/4 cup patdi
1/2 cup sangri
2 tbsp Red chili powder
1 tbsp Coriander powder
1/4 tsp Turmeric powder
1 tsp Salt
1/3 cup Oil
2 Dry whole chilis
1 tsp cumin seeds
Method -
Mix all the dry ingredients (dry sabzi) in a vessel, wash them with water for 3-4 times and remove all dirt. Sieve dried vegetables from water and soak in hot water for 1-2 hours.
After 2 hours, boil in water for 8-10 minutes, switch off the flame, sieve and keep aside.
Heat oil in a wok, crackle cumin seeds, add whole dried red chilis. Add boiled vegetables, red chilis powder, turmeric powder, coriander powder, salt and kachri, mix and cook low flame for 2-3 minutes, cover with a lid and cook for 5 minutes on low flame, switch off the flame enjoy rajasthan famous kair sangri sabji.
