Hi everyone! First off I hope the quality of this video is okay - it was my first time making a video like this! Hopefully they'll get better!
Like I said in the video, I eat tons of Indian and American food and everything I make is usually simple and fast! Indian food (and asian food) can very easily be made vegan if you avoid ghee, milk and yogurt. Living in America, this is SUPER easy because there are countless substitutes for those items and they taste amazing! There are a million and one ‘what I eat in a day’ videos out there already but I hope to put a unique spin on the idea by adding in some Indian and student-friendly recipes here and there. Hopefully someone somewhere finds it helpful! HUGE DISCLAIMER - these are not by any means authentic recipes, especially the Indian ones haha. These are foods made easy and simple so I hope no one is offended by how much I've downplayed it.

If you’re new to my channel or just didn’t know, I am a plant-based vegan (and have been for a little more than a year). I initially became vegan for animal-related reasons (a lot to do with ethics and rights as well as inhumane treatment etc) right after my acceptance into veterinary school…. it just felt like the right time. After the initial transition I began to do a lot of reading on how it affects the environment and personal health which was a huge motivation to continue with it.
My diet is vegan and since my transition I have not purchased any non-vegan clothing items or cosmetics/makeup. I do have lots of non-vegan items from before my transition and I will continue to use these things as to not waste them (these include non-vegan makeup, clothing and shoes). I’m trying extremely hard to be mindful of household items especially things like cleaning chemicals and I hope to be completely cruelty-free within a year or so!
Being vegan has made me feel better than I have ever felt in my life, both physically and mentally. It has improved my health, digestion and cleared my conscience and I recommend it to anyone who’s interested. For those of you who are trying out veganism, don’t ever be discouraged! Do your research, be well-informed and educated and don’t let naysayers get to you! Also, don’t be too hard on yourself. I’ve slipped up here and there and its all a part of the process. In the end, its still one of the best decisions I’ve ever made!
