This is how you make classic Chicken Francese. In a shallow dish combine the flour, salt, and ground black pepper. Then, in a separate dish, break in the eggs and whisk them together with a fork. Using a pair of tongs, dip the flattened chicken breasts in the flour mixture, making sure they're completely covered with flour, then in the egg mixture. Melt one and a half tablespoons of the butter in a 12 inch skillet over medium-high heat. Brown the chicken breasts, turning them once, until they're golden. This shouldn't take much more than three minutes. Transfer them to a plate and set them aside.
Into the same skillet, add the freshly squeezed lemon juice and then pour in the chicken broth. Bring the mixture to a boil over high heat and then return the chicken to the skillet. Lastly, add the remaining butter, reduce the heat and let the chicken simmer for three minutes. If you're using unsalted butter, you might need to add a pinch of salt. Check that the chicken breasts are thoroughly cooked and arrange them on a serving plate. Pour over the sauce and serve.
