5 TYPES CRISPY CHANA
Preparation time 15 minutes
Cooking time 20-25 minutes
Serving 1-2
Ingredients :
Chana Jor
1 cup Chickpeas, soaked, boiled, छोले
1 tbsp Black pepper powder, काली मिर्च पाउडर
Salt to taste
½ Lemon juice, नींबू का रस
Oil for frying
1 tsp Black pepper powder, काली मिर्च पाउडर
4-5 fried Dry red chillies, crushed, तली हुए सूखी लाल मिर्च
Crispy Chana Chat
1 cup Chickpeas, soaked, boiled, छोले
1 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 tbsp Gram flour, बेसन
Salt to taste
½ tbsp Rice flour, चावल का आटा
¼ tsp Dry mango powder, अमचूर पाउडर
A pinch of asafoetida, हींग
½ tsp Degi red chilli powder,देगी लाल मिर्च पाउडर
A pinch of turmeric powder, हल्दी पाउडर
½ tbsp Oil
2 tbsp Water
Oil for frying, तेल तलने के लिए
1 Green chilli, chopped, हरी मिर्च
¼ Ginger, chopped, अदरक
½ tbsp Coriander leaves, chopped, धनिया पत्ता
Sev, सेव
¼ tsp Chaat masala, चाट मसाला
A degi red chilli powder, देगी लाल मिर्च पाउडर
1 tbsp Spring onion, white part, chopped, प्याज़ पत्ता
½ Lemon juice, नींबू का रस
2 tbsp Pomegranate pearl, अनार के दाने
Frying Chinese Style Crispy Chana
3 cups Chickpeas, soaked, boiled, छोले
Salt to taste
¼ cup Cornflour, कॉर्न फ्लोर
3 tbsp Refined flour, मैदा
2 tbsp Rice flour, चावल का आटा
A pinch of baking soda, बेकिंग सोडा
2 tbsp Water, पानी
Oil for frying, तेल तलने के लिए
Chana Manchurian
1 tsp Oil
½ inch Ginger, chopped, अदरक
1 Whole Spring onion, chopped
Salt to taste
1 tsp Soy sauce, सोया सॉस
¼ tsp Sugar
Water
1 cup Fried Chinese style chana, चाइनीस स्टाइल तला हुआ चना
1 tbsp Coriander leaves, roughly torn
¼ tsp Vinegar, सिरका
Crispy Chilli Chana
1 tsp Oil
½ Onion, chopped
¼ Capsicum, chopped, शिमला मिर्च
¼ Ginger, chopped, अदरक
1 tsp Soy sauce, सोया सॉस
1 tsp Red chilli sauce, रेड चिली सॉस
1 tbsp Tomato ketchup, टॉमैटो केचप
¼ tsp Vinegar, सिरका
Salt to taste
1 cup Fried Chinese style chana, चाइनीस स्टाइल तला हुआ चना
For South Indian Chana Fry
7-8 whole Garlic cloves, लहसुन
2-3 Green chilli, cut into half, हरी मिर्च
2 sprig Curry leaves, करी पत्ते
1 cup Fried Chinese style chana, चाइनीस स्टाइल तला हुआ चना
Salt to taste
½ tsp Black pepper powder, काली मिर्च पाउडर
Process :
Chana Jor:
In a bowl, add boiled chickpeas (which should be 70% cooked).
Add black pepper powder, salt to taste, and lemon juice mix it well.
Add a little more black pepper powder and mix it well.
Heat oil in a kadai, fry the chickpeas on low heat until nice crispy.
Remove on an absorbent paper, sprinkle some black pepper powder and mix well.
In the same oil, fry the whole dry red chillies until crispy.
Serve with crushed dry red chilli on top.
Crispy Chana Chat:
In a bowl, add boiled chickpeas (which should be 70% cooked), ginger garlic paste, gram flour, salt to taste, rice flour, dry mango powder, a pinch of asafoetida, degi red chilli powder, turmeric powder, oil and water mix everything well.
Heat oil in a kadai and fry the chickpeas in hot oil on medium heat until crispy then remove on an absorbent paper and let them cool down.
In a bowl add green chilli, ginger, coriander leaves, sev, fried chickpeas, chaat masala, degi red chilli powder, spring onion, lemon juice, pomegranate pearl then mix everything properly and serve immediately.
Chinese Style Crispy Chana :
In a bowl, add boiled chickpeas (which should be 70% cooked) salt, cornflour, refined flour, rice flour, a pinch of baking soda, water and mix everything well.
Heat oil in a kadai and fry the chickpeas in hot oil on high heat until crispy then remove on an absorbent paper and let them cool down.
Chana Manchurian :
In a wok, heat oil and add ginger, whole chopped spring onion, salt, soy sauce, sugar, little water, fried chinese style chana, coriander leaves, vinegar then saute everything properly, and serve hot immediately.
Crispy Chilli Chana:
In a wok, heat oil and add onion, capsicum, ginger, soy sauce, red chilli sauce, tomato ketchup, vinegar, salt, fried chinese style chana, then saute everything properly, and serve hot immediately.
For South Indian Chana Fry:
In hot oil deep fry garlic, green chilli, curry leaves until crispy and little brown.
Remove in a bowl and add fried chinese style chana, salt, black pepper powder then mix everything properly and serve immediately.
