My favourite quinoa salad 🍋
I make this salad at least twice a week and it is so filling.
Ingredients:
Cooked quinoa
3 handfuls of spinach
1 cucumber
1 red capsicum
1/2 red onion
1/2 lemon
Your choice of nuts
2 tablespoons of olive oil
Salt and pepper
Method:
- I pre cook the quinoa so I can let it cool
- Then chop up all the veges + nuts nice and small
- Then dress with olive oil, juice of a lemon or balsamic vinegar + salt and pepper
- Mix it all together, serve on its own or with your favourite protein and enjoy!!
