Puran ache dinde is a Maharashtrian traditional sweets which is prepared in many houses
in shravan month on the day of Nagpanchami.
Ingredients:- ( for puran stuffing)
1/2 cup chana dal. ( soak at least 5-6 hours or overnight.)
1 /2 cup jaggery.
1/4 cup fresh grated coconut.
1 smsp. each powder of cardimum, nutmeg and sunth.
1 pinch of salt.
Ingredients:- ( for cover)
1 cup wheat flour.
2 tbsp. Rice flour.
1 smsp. Salt
1 tsp. Pure ghee
1/2 cup water.
Procedure:-
Take 3-4 whistles of chana dal in pressure cooker and before cook
add ltl oil and haldi powder to it.
Let it's cool down the pressure.
In a bowl take all ingredients of cover except water and mix well
and knead a tight dough of it. Add water slowly don't pour more water at a time and knead it nicely
and keep aside for 30.mins.
Take out chana dal and drain it's excess water in one bowl and keep for katachi amti or use in other veggies preparation.
Now in a non stick pan ( keep your gas on low flame ) pour dal and jaggery in the given proportion, after it melts then add fresh grated coconut and all powders of cardimum nutmeg and sunth and mix it well. Allow to cook till a minute and take down the pan, allow it to cool.
Now here knead the dough ltl nicely once again and make equal size balls ltl bigger than puri size.
Have puran in one bowl n keep spoon to it to stuff in puri.
Now roll out all 6-7 puris and stuff puran in it equally and fold it's all 4 edges and close it well and stick.
Take a steamer and keep.water to boil and put one banana or haldi leaf in its top pot and keep.all.the stuffed dinde and steam for 10-12 mins. On medium flame and off the gas after done. Let it be ltl warm and then take out in a plate and pour ghee on it and serve hot.
First keep for naivedy then you may eat.
